			<content:encoded><![CDATA[<p>On a recent trip to Cabramatta, I was intrigued to find a Malaysian version of a home made KFC style mix.  I LOVE KFC so I just had to try it.  Half a bottle of oil wasted to fry it, and I wasn&#8217;t that happy with the result.  It looks okay though, taste was fine, but more akin to a spicy version of the original recipe &#8211; ie it wasn&#8217;t crispy hot and spicy. And a word of warning&#8230;. don&#8217;t inhale when handling the dry mix &#8211; atchoo!!!</p>

			<content:encoded><![CDATA[<p>It is WELL and TRULY winter in Sydney!  The temperature can be in the single digits even during the day &#8211; and I am soon going to be dragging out my heater &#8211; I&#8217;ve done so well so far, as most of my friends have succumbed!! <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   Winter food means slow cooked, warming your home and your heart.  And red wine of course <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />   I just made a huge batch of slow cooked beef ragout, it&#8217;s so easy, as you just prepare it and leave it on the stove or in the oven and forget about it!  First, I took 500g of chuck steak and cut it into little pieces.  I browned off the beef in some olive oil, then added diced carrot and celery and onion, and three cloves of garlic.  When the veges were almost soft, I poured in a cup of red wine and let the water evaporate.  Chuck in a few bayleaves, basil and oregano, and a 700mL bottle of passata.  I also added a beef stock cube.  Cover, boil on low for an hour.  Snuggle up with a magazine and hot chocolate in the meantime <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>When it&#8217;s done, I should have made my own pasta, but I was too hungry and lazy, so I just used spaghetti.  I drizzled it with truffle oil for a special luxurious touch, and served with parsley <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />     There&#8217;s so much left for my freezer for a few more dinners <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

Coffee Warehouse Cafe &amp; Deli (CWCD for short) has JUST opened TODAY!!!  Driving by this site formerly a motorcycle shop, I was soooo excited to see that it was a proposed coffee ROASTER, warehouse, cafe and providore &#8211; 4 in 1 of my favourite things!!! Many a time I drove by, wistfully waiting for opening day.  I thought that day approached when I saw the ad in Seek for the head chef. But alas, more days passed before the paper went up behind the glass facade and then such a tease &#8211; the &#8220;opening soon&#8221; sign!!  And FINALLY this day has come! I saw movement there last week and called up Caffe di Stefano and said they were opening today. I made sure I was there.  It was definitely a low key opening &#8211; only locals in the know would find out about it! Just a bunch of balloons at the entrance, and signs of life, as opposed to most of the surrounding Parramatta Road area which is derelict!  The first sight you see is the pizza bar &#8211; wood fired of course.  Serving as a takeaway, and provider of freshly baked super thinly authentic pizzas for the restaurant.</p>

<p>The restaurant itself is a wide open warehouse space on ground level, and a mezzanine level.  A number of very large communal tables made of polished timber are surrounded by trendy stainless steel chairs.  A bar runs along the length of the window for gazing out into the street &#8211; or for me to sit and read my paper as I intend to, every single weekend for the rest of my life <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />   There are also tables of four as well.  Well , not time to eat yet &#8211; so I browsed around the shop.  It wasn&#8217;t so huge, but the offerings were quality.  Fresh italian crusty bread in every shape you would need for your weekend gourmet table, and at VERY reasonable prices.</p>

<p>The deli has a wide variety of salumi and other meats, as well as anti pasti.  Judging by the hooks above it, I am guessing that some lovely legs of proscuitto may soon arrive <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>Although I did have to have a drink.  What&#8217;s the point of going to a coffee roaster and warehouse if I don&#8217;t sample their namesake? <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   I had a skim mocha. It was only $3.50.  And believe me, it was GOOD.   So smooth down your throat and not harsh or bitter or burnt at all like some coffees!</p>

<p>Well, I had had a taste.  I wanted more. So I went back that night for dessert! <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   First up &#8211; skim hot choc.  Not bad.  But i asked for more chocolate as it tasted of warm milk.</p>

<p>For dessert &#8211; the most inexpensive creme brulee ever &#8211; only $8!   Perfect sugary crust, and served generously with four slices of fresh made biscotti.   Sorry that the custard still didn&#8217;t beat my gold standard of best ever creme brulee (the Sheraton on the Park buffet one) &#8211; but hey, it&#8217;s opening day!   There&#8217;s still time to perfect it!</p>

Wow!!!  Italian waffles, the special &#8211; only $9!!!  TWO waffles served with hazelnut gelato and whipped cream.</p>

<p>But wait &#8211; there&#8217;s more &#8211; sandwiched between them were two further scoops of gelato &#8211; chocolate and Italian vanilla!  Where in town do you get even just 3 scoops of gelato for that price, let alone waffles!!!  I was informed by the manager that the waffles are made by an Italian lady daily.   Let me say that the chocolate gelato was to die for.  It was dark and rich and I could say that it was probably made with the best quality chocolate money could buy.</p>

<p>On our recent trip to Hong Kong, one new yum cha dish that we tried and adored was XO sauce fried rice noodles.  Soooo simple to make, especially since XO sauce is so readily available now &#8211; even at Coles!  By no means a low fat dish, but it&#8217;s just 4 ingredients!  Firstly, buy a packet of those rolled rice noodles from your local asian grocer.  I actually even saw them at Harris Farm too.  Cut them into chunks.  Then, heat a tablespoon of oil in a wok, then add the noodles and toss around until crispy on the outside and gooey in the middle.  Then, add one tablespoon of XO sauce, stir fry until fragrant, and then a splash of light soy sauce.  If you have some, add some chopped shallots until wilted.  Take off the heat, and sprinkle with toasted sesame seeds.  Serve. Eat alone. 			<content:encoded><![CDATA[<p>A rainy long weekend &#8211; what to do!  It&#8217;s not often that I have time to spend all day baking, so why not call the girls over for some high tea  - ahem, afternoon tea, and pull out the dainty tea paraphernalia.    High Tea  (as well call it in Australia, despite it technically being defined as a substantial meal early in the evening and what we have being called afternoon tea by definition), is generally at least $40 a person in most posh establishments such as 5 star hotels.  Having it at home, I&#8217;m quite positive it would be less than $2 per person.  For my tea, I made scones, mini Victoria sponges, mini choc mint madelines, and cucumber sandwiches.  Teas on offer were Lady Grey and English Breakfast (ie , whatever was in my pantry).  In fact, almost everything was in my pantry. All I needed to buy was a cucumber, soft fresh white bread, strawberries and cream.  Here&#8217;s how.</p>

<p>First up, make half a recipe of plain vanilla sponge cake.  The recipe I use is half of the following:  1/3 cup each of plain, SR and cornflour, sifted.  Beat 4 eggs until tripled in volume along with 2/3 cup of sugar.  Gently fold in the flours and bake at 180 degrees for 20 minutes.  So basically, half of the recipe will fill 12 muffin tins, just 1/3 of the way, you don&#8217;t want the sponges to be too high or else they&#8217;ll be huge towers when you fill them with jam and cream.  Flours, eggs and sugar &#8211; pantry? Check.  I also wanted to test my mini madelines tin.  It was filled with less than half a recipe of the chocolate fondant recipe from masterchef, which involves butter, cocoa, chocolate, sugar and flour, again, all in the pantry/fridge.  I steeped some mint leaves in there for a mint flavour, but it didn&#8217;t work that well <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' /> </p>

<p>I filled the cooled sponges with raspberry jam, some whipped cream (purchased ingredient number 1), and sliced strawberries (purchased ingredient number 2).  Aren&#8217;t they sooo sweet and cute looking!!</p>

<p>And how can it be tea without cucumber sandwiches!  I lightly spread with margarine (or avocado if you have some), as butter is too difficult to spread on the fresh bread without mangling it.  I also used a vege peeler to slice slivers of cucumber, discarding the seeds which would make them soggy.   Arrange neatly and evenly on the bread, and stack your sandwiches in a tower to slice off the crusts and into thirds in a uniform way.</p>

<p>Well, try I did.  And it was even better than I expected.  From the window I actually had no idea what type of food it was &#8211; it was definitely Asian &#8211; in fact, it turned out to be Thai.  Home Thai &#8211; as in home cooked style food.  But I don&#8217;t know whose home has such amazing food every night &#8211; maybe a palace?  It was so hard to pick what to eat, but guided by the photos in the extensive menu, and sneaking glances at what arrived at other tables, we settled firstly on the Pad Thai. Did I mention this place is cheap??? $10.50!!  Authentically with sugar, peanuts and chilli powder on the side, fresh and cooked beansprouts.  And not oily but also not gluggy!  Did I mention the staff all use ipads to take your order?  A bit too cute &#8211; because it failed on our occasion and the waitress didn&#8217;t want to hand write our orders cos it wouldn&#8217;t go through.  Luckily it went back online after around 10 minutes. Oh , and also the waitresses wear LV side satchels.  Were they also from Thailand? <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

<p>Highly recommended: the banana flower salad, topped with 6 gigantic prawns. It was text book perfect. Crunch, salt, sour, spicy all in one bite through fresh chillis, fish sauce, coriander, peanuts &#8211; YUM.  And the prawns were so generous.  Served on an artfully carved leaf too.</p>

<p>We finished off with two desserts &#8211; $6.50 for this mango (Fresh!) with sticky rice and coconut cream.  Umm&#8230; not sure if the kitchen mixed up the sticky rice, because it was salty <img src='http://www.foodiechat.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' />   They also have sticky rice as a rice choice too.  So not really a fan of this dish.  Perfect texture of rice though.</p>

			<content:encoded><![CDATA[<p style="text-align: left;">This is no ordinary sausage sizzle.  Fetes and festivals are characterised by a charity gristle sausage smothered in sauce on a thin piece of no frills white bread. onions if you&#8217;re lucky.  This works great &#8211; yummy, cheap, maximum profits.  However, when festivals turn foodie, such a charity treat is no longer enough &#8211; not when you can get gourmet sausage rolls.  Enter the chorizo roll, or for an even more upmarket gourmet version &#8211; the chorizo and garlic prawn roll!!!   For $10, you get a halved chorizo grilled on the BBQ, and half a dozen of garlic prawns smothered in spicy tomato sauce.  And garnished with fresh parsley.</p>

<p style="text-align: left;">The dude at the grill &#8211; the master BBQ-er has perfected the rhythm of turning, cooking, filling, passing.  I&#8217;m sure it&#8217;s a hot and smoky job, but we appreciate you!  The result is the most amazing juicy (huge) mouthful.  These guys also make an appearance the Entertainment Quarter markets in Moore Park.  But I sure am hoping that they will turn up at tomorrow&#8217;s Burwood Festival. I am counting on it!</p>

			<content:encoded><![CDATA[<p>Masterchef Australia should come with a warning.  Warning: Do not watch unless you have a well stocked pantry of food to satisfy guaranteed longings.  Well I luckily do have tonnes of stuff in my pantry and fridge, and today&#8217;s craving was for a warm tarte tatin.  That&#8217;s a French upside down apple tart.  The apples are caramelised then covered with a puff pastry blanket to cook (traditionally in a frypan), inverted and served with vanilla bean ice cream.  I wanted to make individual serves, so here&#8217;s the recipe for 2 people.  Step 1: Peel and slice one granny smith apple.  Step 2: Melt a tablespoon of butter in a saucepan, and a tablespoon of brown sugar. Step 3: Put apples in and cook until soft and some of the juices have come into the saucepan to form a sauce. Step 4: Meanwhile, cut two discs of puff pastry and preheat the oven to 220 degrees. </p>

<p>Step 5: I lined two tart tins with baking paper but for the traditional way, just simmer off some of the liquid until the caramel is thicker, then lay a whole sheet of puff pastry on top and put it in the oven.  For my way, lay the apples nicely in a spiral, then simmer the sauce until it&#8217;s thicker, and then pour over the apples.  Lay the pastry on top.  Step 6: Bake in the oven until puffed and the edges are very brown and the sauce is caramelised.</p>

			<content:encoded><![CDATA[<p>I&#8217;m intrigued &#8211; what is claypot rice?  Well I sort of knew, but how could you have a whole restaurant based solely around this one style of cooking?   Well, the queues outside the shop indicated that it is possible, and highly desirable!  First Taste is a chain of small family very casual restaurants that serves rice topped with all sorts of different meats and toppings that is baked in a claypot as its name implies. The rice forms a delicious crust on the pot, much in the same way that paella has one, and is brought to your table on your personal wooden board.  First Taste is also a specialist in soups.  For $4.50, try the wintermelon and pork soup to whet your appetite, as the rice takes 20 minutes to cook. </p>

<p>Soups range up to $38 per serve that includes shark fins, fish maw and other specialties that may be new to the Australian palate.  But we&#8217;re here for the rice!  Delicious black pepper beef tenderloin rice is so tender, just the right amount of spice, and very saucy to mix through your rice.  At $7.50, you&#8217;d think yo ureally are eating in China!</p>

<p>I was slightly hesistant to order the hand made prawn balls with tofu, as I&#8217;ve experienced many a cheap and nasty seafood dish. But seeing that it was so popular amongst the diners, I tried it.  And was very happy that i did.  The balls were made of real chunks of prawn, sweet but spicy also. The tofu was slightly dry &#8211; I would have loved some more of that delicious XO sauce, but at $8.80 I was happy to just enjoy!</p>

<p>This is my interpretation of a pumpkin and leek lasagna from Australian Good Taste magazine.  I never would have thought that something with no meat could be SO tasty, such that I even relished leftovers!  It makes a great work lunch too.</p>
<p>Ingredients</p>
<ul>
<li>A wedge of pumpkin, chopped into 1.5cm cubes</li>
<li>250g of baby spinach</li>
<li>Clove of garlic, finely chopped</li>
<li>6 free range eggs</li>
<li>200g sliced mushrooms.</li>
<li>1/3 cup of cream</li>
<li>1 handful of chopped mixed fresh herbs (I used parsley, basil and oregano)</li>
<li>A handful of vintage cheddar cheese, grated</li>
</ul>

<ol>
<li>Preheat oven to 200 degrees. </li>
<li>Microwave the pumpkin until cooked through.</li>
<li>In a non stick frypan, heat up a tablespoon of olive oil; then saute the garlic until fragrant, but not brown</li>
<li>Add the mushrooms, saute for a few minutes; then add spinach (washed) and saute until limp.</li>
<li>Line a baking tray with nonstick baking paper (otherwise the egg will be baked into it and very hard to clean &#8211; if you can at all!).</li>
<li>Lay the pumpkin over the paper; then scatter over the mushroom and spinach mix.</li>
<li>Beat the eggs, add the cream, mix in the herbs and season generously with salt and pepper.</li>
<li>Pour the egg mix over the veges; and scatter over the cheese.</li>
<li>Bake for 40 &#8211; 50 minutes until set.</li>
<li>Serve warm with a side salad, or cold with your lunch the next day.</li>
