Hi-Fibre Breakfast

My latest nutritional crusade – getting enough fibre! Apparently beans are good! But I can’t stand the tinned stuff with its suspicious pinkish sweet sauce, so I found a recipe and adapted it to make my own.

  • 400g can tomatoes
  • 1 red capsicum, diced
  • 400g can red kidney beans
  • 1 bay leaf
  • 2 cloves garlic, finely chopped
  • 1 small onion, diced
    1. Saute garlic and onion in a tablespoon of olive oil until soft.
    2. Add drained beans and can of tomatoes and herbs
    3. Season taste. Add a dash of chilli flakes if desired.
    4. Put lid on saucepan and simmer for 40mins until the sauce thickens. Serve with toast.

The chips are amazing and the serving sizes HUGE.  Novelty of restaurant – the bibs they offer you, which any self respecting businessperson shouldn’t refuse lest a drop of the juicy sauce land on your shirt!     In search of the best ribs in Sydney… I have found them. Fred Flintstone, eat your heart out. I don’t know how big the beast was that these ribs came from, but it must have been HUGE.  Don’t wear tight trousers.
